Having a variety of cookbooks in your home is a fun prospect.  However, we don’t always have
a lot of time during the week to search randomly through cookbooks for ideas. 

Putting together your own homemade cookbook, filled with family favorites, can be fun and an
easy way to answer that age old question "what’s for dinner?"

Creating a family cookbook can be as simple as buying a recipe book in which to write, and/or using online tools to gather, organize and publish printed versions of your favorite family recipes.  Whichever way you choose,  the whole family can be involved.  Challenging your children to add to THEIR cookbook will help them become more involved in easy & healthy meal planning, and you will be able to provide meals that your family loves.

  1. My family loves to eat atun. It's super simple and delicious. You dice up two tomatoes, a quarter of an onion, a chile (jalapeƱo or serrano), a little bit of cilantro, and a can of drained tuna in water. You mix all the ingredients together, season with salt and lemon, and you have an easy lunch. It can be eaten on bread like a sandwich, with saltine crackers, or with tostadas or tortilla chips.

  2. June Nelson (WIC) : My family is always asking for my Green Chili Chicken
    Easy and fast:

    Chicken Breast (or thighs)
    Green Chilies (frozen, canned, or fresh)
    Bouillon (Chicken)

    I usually use 4 breasts and 1 large can of chilies and 2-3 cubes of bouillon. Put all ingredients in the crock pot. Chicken first and then the rest.
    Let cook until the chicken is done (High 3-4 hours--Low 5-6 hours depending on your crockpot). Slice chicken and eat with rice or shred
    chicken and eat on tortillas with all the toppings.

  3. One of our favorites for breakfast or as a dessert is a fruity banana split. Slice the banana lengthwise in a dish and top with fresh fruit of your choice. We like blueberries and raspberries. Put an ice cream scoop of Greek yogurt on top and sprinkle with your favorite granola, nuts or coconut. A drizzle of warm fruit compote finishes it off with style! The grandkids love to create their own and I usually give them a half banana to start their creation.
